A finger-licking recipe made from Potatoes with spiced vegetables that you should try is the Luchi and Alur Dom, a recipe that you would probably love to eat over and over.
How to make your Luchi and Alur Dom (Recipes)
To make your delicious and tasty luch and alur dom which is also known as Bengali Luchi Aloo Dum, you need the following ingredients;
Alur Dom
- 6 cups of water
- 1 tablespoon full of salt to taste
- 500g of potatoes (baby)
- Peeled and boiled baby potatoes… 500g
- 4 medium size chopped tomatoes
- Ginger (chopped in 2 inch x 2 inch piece)
- 2 Green chillies
- 1 tbsp of Coriander leaves (finely chopped)
- 2 tbsp of Ghee
- 1/4 tbsp Cumin seeds
- 1 dry red chilli
- 2 green cardamoms
- 3 Cinnamon sticks of an inch length
- 1 medium bay leaf
- 1 tablespoon of Garam masala
- 1 tablespoon of Cumin powder
- 1/4 tsp Turmeric powder
- Salt to taste
- Sugar to taste
Luchi
- 2 cups of all purposes flour (maida)
- 3 tablespoon Oil
- 1/2 tsp Sugar
- Warm water to make the dough
- Cooking oil for deep frying luchis
Step by step (Instruction)
Alur dom
- Let’s start boiling the potatoes by slicing them in halves and putting them in a pan with about 6 cups of water and a tablespoon of salt dissolved.
- Boil the potatoes between 15- 20 minutes. Keep them aside after it has been cooled and peeled off.
- Put the green chilies, pieces of ginger and tomatoes into a blender and blend to a fine paste and keep aside.
- Light a fire of a medium temperature and put on the pan.
- Add a tablespoon of ghee.
- Add the pre-boiled potatoes and sprinkle half a teaspoon of salt.
- Fry your potatoes while stirring to get a yellowish brown for like 10 minute and keep aside.
- In the same pan add 1 tablespoon oil.
- Add cardamoms, cinnamon sticks, bay leaves, dry red chilli, cumin seeds, and give it a quick stir.
- Add turmeric powder and add the blended vegetable paste.
- Mix well and cover the pan with the lid to cook between 8 to 10 minutes.
- Randomly stir the mixture while it cooks.
- Add kashmiri red chili powder, cumin powder and mix well
- Let the gravy thicken for approximately five minutes
- Add salt (to taste) and sugar (to taste)
- Add the potatoes and let it coat well with the gravy
- Add garam masala and mix well
- Add 1 tablespoon of ghee
- Keep stirring till the sauce thickens further (for approximately five minutes).
- Garnish with coriander leaves.
Luchi
- Mix thoroughly 2 cups of flour, the all purposes, with 3 tablespoons of oil and a half teaspoon of sugar. The mixture should be sticky to hold each other when molded.
- Use warm water to knead the dough
- Add a little water at a time and keep kneading till the dough comes together. This will take approximately 10 minutes
- Keep the dough covered for approximately 30 minutes
- After 30 min knead the dough for sometime
- Apply little oil on your palms and portion the dough
- Potion them in small disks and make around 10 cm wide flat dough with the rolling pin.
- Fry them in oil on one side, till it puffs up and then fry them on the other side. The frying should take approximately 2 to get an evenly fried puff.
Your luchi is ready and can be served with the alur dom.
